What is in the Eckington building

This floor was built for manufacturing, not for a line of caterers sharing one giant hotline.

Union Kitchen is 30,000 square feet of certified shared commercial kitchen space located at 1625 Eckington Place NE. Packaged food brands, CPG companies, and meal delivery teams run first cases and pallet orders in the same building. You are not borrowing a restaurant kitchen after close. You are on a production floor with docks, freight elevators, and walk-in coolers and freezers that take pallets.

The equipment matches that job. Blast chillers. Extruders. Steam kettles and tilt skillets. Rolling rack ovens and proofers. A flow wrapper. 20-quart and 60-quart mixers. The building has upgraded electrical capacity built for manufacturing equipment, not restricted to the tabletop units that live in a home kitchen. That is the difference between testing a recipe and repeating a batch a buyer will reorder.

Cold storage and blast chillers keep the cold chain on site. The freezers are designed for frozen food production and hold at sub-0 temperatures. The dock and freight elevators are how a wholesale order leaves. Co-working office, high-speed internet, gas, water, electricity, and building management come with membership.

The building is USDA-meat inspected and certified, FDA-certified, gluten-free-certified, and Whole Foods–approved. Staff work to GMP and HACCP standards and hold those certifications. DC Health inspects members here. Those credentials live on the facility. They are not automatic claims on your label. You file your own DC Health path against this address. You cannot produce under Union Kitchen’s license.

Grocery hours, sandwiches, and delivery apps are not the kitchen. If you need a manufacturer license attached to this address, you want the production facility.

Union Kitchen is not Union Market, the food hall in a different part of Northeast. It is also not the out-of-town restaurants that use the Union Kitchen name.

How you license space here

This is not an hourly clock as the main model. You license a monthly membership or a drop-in day pass. A day pass covers a one-off production run. Momthly membership commitments run 3, 6, or 12 months and longer.

Shared membership includes production space, co-working office, gas, water, electricity, high-speed internet, and access to equipment. Tiers are sized by equipment days. Current numbers stay on the homepage. If you're comparing different pricing models, read more on Commercial kitchen cost in DC.

Dedicated space is a modular private area in the same Eckington facility. It is not a room you outgrow and then leave. You bring equipment. You add area as volume grows. Facility management stays with Union Kitchen so you can focus your energy on production.

That is first batch to full scale in one Eckington building. When a continuous line and plant overhead beat licensing space here, you leave. Until then, stay where docks, pallet storage, electrical capacity, and DC Health already exist. How to scale from a home kitchen.

Getting here, docks, and food trucks

The site is built for cases and pallets through the dock. Meal delivery routes and wholesale pickups use that dock. Members can enter any hour.

Eckington does not have overnight food-truck parking. Storage and dock time can still be useful. If overnight or all-day truck parking is the main need, a depot commissary is the better building.

Who this location is for

Cottage food stays in the registered home kitchen. You cannot produce cottage food in this shared kitchen. Confirm current rules on DC Health’s cottage food page.

First Run is the shelf path, not the building

Union Kitchen is the licensed facility where you produce. First Run is the playbook that runs with it. First Run is a food and beverage Accelerator in Washington, DC that meets you at the idea stage and builds the brand with you. 90 days to shelf. 90 days to prove it's ready to scale.

Kitchen membership does not require First Run. And vice versa.

Walk the floor

A tour is 45 minutes, weekdays and weekends, by appointment. You walk the production floor, storage, and dock. You leave with a tier that matches the equipment days you will actually use.
